Delicious and Easy Pumpkin Bread

The smell is amazing and every bite consists of a warm, soft, mouthwatering experience. This pumpkin bread is an amazing food choice for fall, especially since Thanksgiving is around the corner.

Ingredients (bread):

  • 1 can of pumpkin puree
  • 2 eggs
  • 1/2 cup of vegetable oil
  • 1 teaspoon of vanilla extract
  • 1 cup of sugar
  • 1 cup of all purpose flour
  • 1/2 teaspoon of salt
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground nutmeg
  • 1/8 teaspoon ground cloves

Ingredients (glaze):

  • 2 1/2 tablespoons of confectioners sugar
  • 1 teaspoon of vanilla extract
  • 1 1/2 tablespoons of water

Prep time: 15 minutes

Cook time: 40 minutes

Directions:

Preheat the oven to 350ºF

Spray a standard size bread pan with Pam or non-stick cooking spray.

Combine the pumpkin, eggs, oil, sugar and vanilla extract in a bowl and mix well (use a hand-mixer or a standup mixer).

In a separate bowl combine flour, salt, baking soda, baking powder and all of the spices (mix this with a spoon).

Add the dry ingredients into the previously mixed wet ingredients and mix until combined.

Once all of the ingredients are fully mixed (do not over mix), pour the bread batter into the bread pan and shake to even out the top.

Bake the bread for 40 minutes (stick a toothpick in the top the bread to make sure it is cooked all the way through).

While the bread is cooking, mix the confectioners sugar, water and vanilla extract.

Once you pull the bread out of the oven, let it cool for 10 minutes then, poke holes with a fork all over the top of the bread.

After you’re done poking holes, pour the glaze mixture on top of the bread and let it soak in before removing the bread from the pan.

This bread tastes delicious with a thin layer of butter spread on it. Once you’re done eating a slice if the yummy pumpkin bread wrap the remainder of the loaf in plastic wrap and refrigerate. This bread can be frozen if you make too much to eat in a short time period.
